RacletteFrom the Rhone Alps region of France, this cheese was traditionally placed in front of an open fire and as it melted, scraped onto hot potatoes and bread.
The supple elastic texture melts superbly and has a sweet taste that is stronger when melted. Slice or grill over potatoes and serve with cooked meats and fruity red or white Savoie wines.
