Roquefort AOCUsing 100% fresh ewes milk, and known as the king of blue cheeses, roquefort was the first French cheese to be granted AOC status in 1925. The cheese has a soft, creamy texture with a strong salty finish, and is still matured in caves at Roquefort-sur-Soulzon.
